For years, home baristas have blamed cheap roasts or stale coffee beans for that dreaded, lip-puckering sourness in their morning cup. But if you are using a Breville Espresso machine, your beans might be entirely innocent.

The real culprit behind acidic espresso is often under-extraction due to a grind that simply is not fine enough. While most users rely solely on the external grind size dial, they are completely missing a hidden, secondary adjustment built right into the machine’s built-in grinder. Breville engineers included an adjustable internal top burr that lets you grind significantly finer than the outer dial allows. By accessing this hidden mechanism, you can slow down your extraction time, effectively eliminating that sour flavour and pulling rich, syrupy shots.

Unlocking this feature is incredibly straightforward. First, empty your coffee beans and unlock the bean hopper to remove it from the top of the machine. Once the hopper is out, you will see the metal top burr. Lift the wire handle on the burr, twist it counter-clockwise to unlock, and pull it straight out. On the side of this burr, there is a red alignment marker and a numbered ring. By removing the small wire clip, you can rotate the top section to a lower number—typically dropping it by one or two steps—before popping the clip back into place. Lock the top burr back into the grinder, reattach your hopper, and your Breville Espresso machine is now recalibrated to grind much finer.
